Should I goto Hamburg or is there another spot. All I have are those 2 SB's.

You need a big kite. You will not be riding much if those are your only kite sizes. My advice would be ditch the 7m and buy a 15m - 16m and a 9m, it would balance out your quiver a lot more. You will not be needing a 7m around here more than about 4 days a year unfortunately....

I've used my 11 once...used my 15 20+ times this year.

Well... Dr David forgot to ask the paramount question... .how much do you weigh? if you weigh less than David, then you might have lots of fun on your 7m on a 25mph day.
What year are they? The older SBs probably dont pull as much for their size - but Dr David could tell you, he has tried more kites than most crash test dummies that write the reviews.
